Located in the heart of Sydney's CBD, Palazzo Salato is an ode to the great trattorias of Rome. Created to give Ragazzi regulars a place to linger longer, it’s a little more grown up, a little more refined, with a lot more space. Spread over the heritage-listed building’s walk-in bar, dining room and hidden private dining room, there's a lively space to suit every occasion, big and small.

To eat, Palazzo Salato's menu of snacks, hand-rolled pasta and sustainably sourced proteins from some of Australia’s best farmers, is devised by Executive Chef Alex Major and Head Chef Matthew Goddard.

While seasonally led, a few classics remain on the menu always, including the Palazzo ham with colatura hot sauce and focaccia; stracciatella with anchovies; mafaldine with spanner crab, sea blight, uni butter and chilli; and the agnolotti dal plin to name a few. To drink, an 800-strong wine list focusing on Italian, Australian and French wines.

Regional Dinner Series: Southern Highlands, June 1st & 2nd

Palazzo Salato is delighted take part in Vivid Food’s inaugural Regional Dinner Series on June 1st and 2nd, collaborating with Stephen Santucci and focusing on ingredients and produce from farms in the Southern Highlands.

Love Tilly Group’s Culinary Director Scott McComas-Williams will be joined in the kitchen by Santucci of acclaimed Moonacres Kitchen. Together, with Palazzo Salato’s Executive Chef Alex Major, the trio will present a collaborative, produce-forward set menu, united by a love of locally sourced ingredients and Italian cooking.

Group Dining

Tucked away behind the leather curtain in our main dining room, you’ll find Palazzo Salato’s private dining room, seating up to 22 guests. In the main dining area, semi-private bookings can be made across our marble topped tables and plush velvet booths, seating up to 35 guests. Half venue and whole venue exclusive hire can be arranged upon request, seating up to 50 or 110 guests, respectively.

Bookings can be made online for groups of up to 16 people.

Downstairs at Letra House...

Letra House is an underground restaurant and late-night wine bar, hidden beneath Palazzo Salato. The wine list of 50 bottles is ever changing, all available by the glass, with a succinct selection of cocktails and vermouth.

A seasonal Spanish-leaning menu of snacks, small plates and sharers is a reflection of the team’s time spent cooking and travelling around Spain.

Happy Hour is from 4pm to 6pm, Monday to Saturday.
