Letra House

Letra House is an underground restaurant and wine bar, hidden beneath Palazzo Salato in Sydney’s CBD. The wine list is ever changing with over 50 bottles - all available by the glass - with a succinct selection of cocktails and vermouth.
A Spanish-leaning menu of snacks, small plates and sharers is a reflection of the team’s time spent cooking and travelling around Spain. There's a focus on seasonal, sustainable and producer-led ingredients, with the team regularly taking a nose-to-tail approach.
Fast-paced and dynamic, you might expect to see tapas like raw scampi tostadas and Manchego custard-filled donuts with anchovies. There will always be a traditional Spanish tortilla, as well as a selection of jamón. Head Chef Brandon Jones’ socarrat with pippies and firefly squid is not to be missed, nor the house-made morcilla.
Happy Hour runs from 4pm to 6pm, Monday to Saturday, see you at the bar.
Broadsheet Dine Out: Letra House Happy Hour Exclusives

New snacks and sips, one week only
As part of Broadsheet's Dine Out festival, we're adding a new cocktail and a couple of snacks to our Happy Hour menu, exclusively available for the week commencing Monday, July 27th (4pm–6pm).
There's tarama toast, topped with mussel escabeche and bottarga, and potato skin gratin topped with tartar de fuet, which is Catalan cured pork sausage, chopped and served like a classic steak tartar.
To drink, try a Shengen Sour. Brandy, blackberry, PX, baking spices, whites and citrus, this is a winter warmer mixed for one week only.
These join Letra House's usual lineup of Happy Hour drinks and snacks, so take your seat and take your pick. Book ahead or walk in.

The Dalmore x Letra House

A special whisky tasting with Spanish flavour
Letra House is excited to announce an exclusive dinner experience with one of Scotland’s most luxurious single malt houses, The Dalmore. Guided by Josh Davies, Single Malt Whisky Specialist for The Dalmore, celebrate the new release The Dalmore Aged 17 Year whisky.
Taste through a trio of The Dalmore whiskies, paired with sherries to highlight the nuances aged sherry casks bring to each single malt. As a nod to the birthplace of sherry, enjoy an Andalusian set menu: potato galette with smoked eel brandade and pickled onion; pippies, jamón and arrocilla beans in a sherry beurre blanc; beef cheeks, braised in oloroso and served with papas fritas; and more.

Socarrat
Head Chef Brandon Jones’ socarrat is inspired by the crispy, caramelised rice on the bottom of a paella pan. You’ll always find it on the menu, in some guise or another.
At the moment, it’s topped with firefly squid, mussels and vongole, with spoonfuls of golden Spanish vinegar–spiked beurre blanc.
Upstairs at Palazzo Salato...
Palazzo Salato is an ode to the great trattorias of Rome, with a menu of snacks, hand-rolled pasta and sustainably sourced proteins from some of Australia’s best farmers.
While seasonally led, a few classics remain on the menu always, including the Palazzo ham with colatura hot sauce and focaccia; stracciatella with anchovies; mafaldine with spanner crab, sea blight, uni butter and chilli; and the agnolotti dal plin to name a few.
To drink, an 800-strong wine list focusing on low intervention Italian, Australian and French wines.
