Re:purpose Avia x Fabbrica Newtown

This July, Fabbrica Newtown head chef Keir Ballantyne hits the pans at Avia in Darlinghurst for a Sunday long lunch heroing oft overlooked or unloved ingredients, and turning them into memorable morsels.

Scotland-born Keir is an alum of several truly exceptional kitchens across the globe, including 108 (Copenhagen), three-Michelin-starred The Fat Duck (England), Carousel (London), Cornerstone (London), Cutler & Co and Marion (Melbourne), and Bar Vera (Bali). Keir has been at the helm of our Fabbrica Newtown kitchen since launch in September 2024.

As part of Avia’s Re:purpose series, Keir and the Avia team have collaborated on a menu marrying creativity with sustainability, with highlights including bluefin tuna head polpette, stuffed Sommerlad chicken wings, and tubetti with snapper head ragù.
