We’re thrilled to invite you to an exclusive Praeter wine event, hosted behind the curtains of Palazzo Salato’s private dining room later this month. 

Join founder and winemaker Matthew Large for an enlivening spring evening of wine and food as Matt guides you through Praeter's new releases over an Italian feast by Palazzo’s Executive Chef Alex Major.

Founded in 2018 and inspired by a fortuitous vintage spent in Barolo, Praeter was buoyed by Matt's obsession with Nebbiolo and its potential in Australian terroir. Having spent many years working with esteemed names such as Shaw and Smith (as Senior Winemaker) and Tolpuddle, Praeter became his full-time focus in 2024.

For many years, the label has courted an IYKYK following for its considered, low-intervention, low-yield range. Notably, Matt was awarded the Winemaker's Choice gong at this year's Young Gun of Wine awards, voted on by fellow finalists, indicative of the quiet respect he has built over the years.

These days, Matt's got his finger in every pie—or, should we say, parcel—growing and tending his own fruit, and making the wines. While nebb is still central to Praeter's tight portfolio, 2025 marked the debut of Chardonnay and Pinot Noir to the range (from specific single sites in the Adelaide Hills).

On the night, you will taste from a selection of Praeter's spring releases. Of particular note is the 2023 Langhe Nebbiolo. 100% whole bunch from the vineyards of Figli Luigi Oddero, it is Matt's swan song to Italy, with his focus now solely on Australian vineyards.

To accompany your Praeter pours, enjoy a thoughtfully paired four-course set menu. A taste: Palazzo Salato's signature ham and hot sauce, stracciatella draped with Cantabrian anchovies, trottole amatriciana and plumply-stuffed scarpinocc of Jerusalem artichoke, Rangers Valley top sirloin with Salato butter, salted dark chocolate tart, and more.
