Open on Victoria Street, the newest Fabbrica is spread across two levels with a 20-person communal table and private dining room. The menu stars Fabbrica favourites – including cacio e pepe – and Scott McComas-Williams' famed cotoletta alla Milanese, as well as dishes new to Darlinghurst like a tonnarelli with blue swimmer crab and Lumache, pork & chilli sausage, beans, cime de rapa. Curated with the same ethos of the group’s previous venues, the wines on offer are of superior terroir, organic/biodynamic viticulture and hands-off winemaking with a focus on Italy and Australian-grow Italian varieties.
